Extra brut cider from dozens of apple varieties from several regions: Burgundy, Normandy, Brittany and Pays d'Othe. Slowly fermented and matured in wine barrels, both white wine (Aligoté, Chardonnay, Chenin) and red wine (Pinot Noir, Cabernet). Secondary fermentation in the bottle (methode champenoise). Notes of baked apple, quince and honey. Nice fullness in the mouth without feeling heavy.
